Fresh Carrot Salad

REFRESHING AND VERSATILE!

Serves: 4

Ingredients

1 lb. carrots, washed and peeled
2 tbs. mint, finely chopped
salt
freshly ground black pepper
6 tbs. extra-virgin olive oil
2 to 3 clementines, cut into thick slices (optional)
2 tbs. toasted sesame seeds (optional)
3 oz. crumbled goat cheese (optional)


Instructions

Using a box grater, grate carrots into a bowl and toss with mint.  Season with a pinch of salt and freshly ground black pepper.

Add olive oil and lemon juice and mix well.  Serve as is, or experiment with tossing in the optional ingredients.
